Butter Chicken by Chef Adam D’Sylva

Butter Chicken by Chef Adam D’Sylva

Ingredients:
Butter Chicken
2 tbsp vegetable oil
600g chicken thigh, diced
Street Kitchen Butter Chicken: sauce
Ginger garlic paste
Butter chicken spice pack
2 tbsp cream
Raita
100g Greek-style yoghurt
½ Lebanese cucumber, finely diced
1 tbsp grated ginger
2 spring onions, whites finely diced
½ tsp cumin powder
Pinch salt
½ lemon, juice
Green beans foogath
2 tbsp vegetable oil
½ tsp mustard seeds
10-12 curry leaves
1 dried Kashmiri chilli
¼ tsp turmeric powder
1 tsp split urad dal
1 pinch asafoetida (hing), optional
1½ to 2 tbsp fresh grated coconut
200g french beans
To serve

Method:
- Coat chicken pieces in ginger garlic paste. Add vegetable oil to a hot pan over medium-high heat. Add the spice pack and fry for a few seconds or until fragrant. Add the chicken, season with a pinch of salt and cook for 2 minutes or until sealed on all sides.
- Once the chicken has sealed, add the butter chicken sauce. Cover with a lid and simmer for 15-20 minutes.
- For the raita add yoghurt, cucumber, grated ginger, spring onion, cumin powder, salt lemon juice, stir well until everything is combined. Pour into your serving bowl and set aside.
- Add oil to a hot wok and mustard seeds, dried kashmiri chilli and curry leaves until they pop. Add coconut, split urad dal, turmeric, and asafoetida. Add green beans and stir through. Pour into your serving platter and set aside. Add cream to the butter chicken, stir through. Serve the butter chicken with beans, raita and papadams.
